18 YEAR OLD SINGLE MALT IRISH WHISKEY COGNAC CASK

A legendary Single Malt – The last of its generation. Grace O’Malley 18 Year Old Single Malt Cognac Cask is a an award-winning Single Malt, aged for at least 18 years in Bourbon barrels, and refined for six months in wet Cognac casks which previously held Cognac for more than 30 years.

The casks have been hand selected by Grace O’Malley Master Blender, Paul Caris, who has worked with leading wine- and spirits companies and has won the ICS „World‘s Best Cognac“ trophy. This additional maturation in the Cognac cask then embeds the rich fruit, almond and cinnamon flavours derived from the wood of the cask.

Individually numbered and signed by our Founder Stephen Cope, each bottle is a celebration of the craft of Irish whiskey and the singular character of Grace O’Malley. With only 211 bottles available, this limited edition is a true mark of our ambition.

NOSE

Malty with layers of dried yellow fruit and Cognac Rancio. Aromas developing to banana flambé and pear.

PALATE

Rich and smooth mouthfeel with touches of sweet oak, revealing cinnamon, dried almond and custard on the back palate.

FINISH

Sweet and powerful, revealing a lingering, elegant Cognac.

Port Cask

18 YO SINGLE MALT IRISH WHISKEY PORT CASK

Grace O’Malley 18 Year Old Single Malt Irish Whiskey – Port Cask is aged for at least 18 years in Ameri-can oak barrels before being transferred into Ruby Port casks and refined for a period of eight months. The characteristically intense dark red fruit flavour of the Port imparts a delightful fruity richness to an already delectable whiskey.

The cask has been personally selected by Grace O’Malley Master Blender Paul Caris during his visits to an incredible winery in the Alto Douro region, which is famous for the quality of its port wines. With its rolling vineyards and access to the majestic River Douro, the Alto Douro region has a fine history of trading and may have even hosted Grace O’Malley on her voyages around Portugal.

NOSE

Yellow flowers and dark juicy aromas. Dominated by orange blossom, rich malt, blackcurrant, oak and nuts.

PALATE

Great depth of fruity richness. The cask contributes a port sweetness.

FINISH

Very long finish married with pleasant ageing notes.

Amarone Cask

19YO SINGLE MALT IRISH WHISKEY AMARONE CASK

Grace O’Malley 19 Year Old Single Malt Irish Whiskey – Amarone Cask is aged for over 18 years in American oak barrels before being transferred into Amarone Della Valpolicella barrels and refined for a period of eight months. The characteristically intense dark red fruit flavour of the Amarone imparts a delightful fruity richness to an already delectable whiskey.

The cask has been hand-selected by Grace O’Malley Master Blender Paul Caris during his visits to the stunning Veneto region, which sits in the foothills of the Alps. The Veneto region is one of Italy’s best known wine-making regions and with rolling vineyards and views of the sparkling water of Lake Garda is considered one of the most beautiful landscapes in northern Italy.

A complex range of flavours. Rich, intense red fruits, raspberry, blueberry with hints of spice and vanilla.

PALATE

Good structure with perfectly balanced silkiness and amarone sweetness.

Bourbon Cask

19 yo single malt irish whiskey bourbon cask

Grace O’Malley Single Cask 19 Year Old Single Malt Irish Whiskey – Bourbon Cask has been matured exclusively in Bourbon barrels for a minimum of 19 years, creating deep, complex layers that reveal summer fruits with layers of cinnamon.

This whiskey has been chosen by Paul as a standalone Bourbon expression due to the immaculate nature of the distillate. The rare single malt is one of the last of its generation to come from the world-renowned Cooley Peninsula.
